I. INTRODUCTION ABOUT NEM LUI
WHAT IS NEM LUI ?
- Nem Lui is a dish originating from Lagi town, Binh Thuan province.
- It is a patty skewered with a small pointed bamboo stick and baked on a charcoal stove. This dish is often served with rice paper, vegetables and dipping sauce.
- Nem Lui is quite popular in some provinces in Vietnam such as Phan Thiet, Hue, Vung Tau and Bien Hoa.
II. HOW TO MAKE NEM LUI?
1. INGREDIENTS:
A. Nem Lui:
- 250g of pork
- 450g of sausage
- Cucumber, chopped lemongrass and dried onions
- Fresh rice noodle, rice paper wrapper
- Salt, pepper, seasoning seeds, fish sauce and cooking oil
- Fresh vegetables to eat beside: basil, lettuce,… or any kind of herbs of your choice
NOTES:
+ Sausage: Giò
+ Lemongrass: Sả
+ Fish sauce: Nước mắm
+ Basil: Húng quế
1. INGREDIENTS:
B. Sauce:
- Fish sauce or soy sauce
- Sugar, paprika
- 100g of ground pork
- 150g of pig’s liver
- 450ml of fresh milk
- Peanut, flour
NOTES:
+ Paprika: Bột ớt cay nhẹ, thường được sử dụng trong các món ăn Việt Nam( có thể sử dụng từ đơn giản hơn là chilly powder )
+ Ground pork: Thịt lợn xay
2. How to make?
Step 1:
- Combine sausage, pork, dried onions in a large bowl with a pinch of salt, fish sauce, seasoning seeds, pepper and cooking oil then wrap it with plastic wrap and refrigerate for 3 minutes to chill mixture
Step 2:
- Pick up the herbs, wash with salted water then drain
- Wash the cucumber, cut into short pieces then remove seeds
- Clean the lemongrass, then cut into 15cm long pieces
Step 3:
- Apply some oil onto your hand
- Use the spoon and spoon some of the meat mixture onto the head of the lemongrass then flatten the meat
Step 4:
- Apply oil onto the meat to prevent stickiness
- You can grilled the meat with aromatic charcoal, or just bake in the oven or microwave
- Clean the pig’s liver, slice into fine pieces, soak it in milk for 30 minutes, then take it out and drain
- Roast the peanut, crush the sesame seeds, dissolve the flour with water
Step 5:
- After finish the spring rolls preparation, heat oil in a pan, fry the garlic
- Then put the pork and liver into the pan and stir-fry
- Boil the oil with paprika in small heat, simmer until the meat is tender, then pour in the flour mixture and stir well, when you see the water simmer, turn off the heat and put in sesame and the peanuts
=> Put the spring rolls onto a plate, then pour the peanut sauce into a small bowl, put it beside the plate, decorate with herbs and fresh vegetables beside.
NOTES:
+ Chill
+ Drain
+ Spoon -> 1_ Spoon (n): Cái thìa
2_ Spoon (v): Xúc
+ Aromatic charcoal: than hoa ( than hoa khi đốt sẽ có mùi dễ ngửi hơn than thường )
+ Soak: Ngâm
+ Simmer -> 1_ Simmer (v): Đun ( với lửa nhỏ )
-> 2_ Simmer (n): Sôi ( vừa đủ sôi )
